Nos últimos anos, a gastronomia tem-se afirmado como uma forma de arte, em que o ato de comer se apresenta como obra efémera que combina sabor, estética, mas também uma dimensão performativa (ritual), contextual e social. Distingue-se de outras artes por incluir uma dimensão íntima e irrepetível: a experiência da ingestão e do sabor sentido no próprio corpo. É neste contexto que surge o projeto Comer com os Olhos. Durante três residências artísticas no verão de 2025, assistimos ao encontro entre artistas visuais e gastrónomos, e ao surgimento de uma nova linguagem criativa. Esta linguagem transformou a “escassez”, tema central desta primeira edição, em inesperada abundância. A falta de recursos converteu-se em profusão de criatividade, e a ausência de fórmulas estabelecidas permitiu a invenção de novas formas de fazer, pensar e partilhar. Como dizia Ferran Adrià, “cozinhar é um ato de amor, um ato de dar”, e foi essa generosidade que guiou todas as experiências, provando que tanto a arte como a gastronomia só se completam com a participação do outro.

In recent years, gastronomy has established itself as a form of art, where the act of eating becomes an ephemeral work that combines flavor, aesthetics, and also a performative (ritual), contextual, and social dimension. It distinguishes itself from other arts by including an intimate and unrepeatable element: the experience of ingestion and the taste felt within one’s own body. It is within this context that the project Comer com os Olhos emerges. During three artistic residencies in the summer of 2025, we witnessed encounters between visual artists and gastronomes, and the birth of a new creative language. This language transformed “scarcity,” the central theme of this first edition, into unexpected abundance. The lack of resources became a profusion of creativity, and the absence of established formulas allowed for the invention of new ways of making, thinking, and sharing. As Ferran Adrià once said, “cooking is an act of love, an act of giving,” and it was this generosity that guided all the experiences, proving that both art and gastronomy are only complete through the participation of others.
